Recipe: Taco Wreath

I love to cook! I have quite a few people ask me how I get Olivia to eat such healthy foods. My response is always the following:

1. I don't give her a choice of bad foods. :), but more importantly:

2. I have her cook with me!

 

We have so much fun cooking that she cannot wait to eat her creation!  Even my teenage step-daughter eats healthier when she helps cook, too!

 

This week everyone help create our featured recipe from Pampered Chef!

TACO WREATH:


2 packages crescent rolls (*note: the reduced fat tastes the same!)
1lb ground beef (turkey and chicken work, too) (*note: we are vegetarians, so I use the soy ground or tofu-it's just as yummy! And so much protein!)
1 block of cheddar cheese
1/4 cup of salsa (any kind)
1 small onion
1 envelope taco seasoning
1 garlic clove

Consider adding in peppers, olives, and even broccoli!  Just be sure to sauté broccoli and peppers first, since they take time to soften.  The colorful veggies will make for a very festive Mardi Gras meal!

 

Roll out crescent rolls on a stone or pan in the shape of a big sunshine with the triangle points overlapping a pizza stone/pan.

Brown 1 lb of ground beef (or turkey or chicken) and then add 1 envelope of any brand Taco seasoning mix and a few drops of water.

 

Grate 5 or 6 ounces of cheddar cheese

Combine apx 1/4 cup of chunky salsa, chopped up onion and chopped clove of garlic in bowl and add to the meat.

MIX all these ingredients together and lay around the inner part of your crescent roll wreath.

Fold over the points of the rolls over the taco mixture to form a “wreath”.

 

Press down to make it flatter and bigger. (*note: the picture gives you the perfect idea)


If you like, you can whisk an egg white and brush over the wreath to make the rolls glossy or just leave it plain.


Bake at 355 degrees for about 30 minutes or until the dough is deep golden brown.
