Recipe: Partying Disco Fries

Preheat oven to 450.

 

Ingredients:

  • about 6 potatoes (russet work best, but for a nice change, you can do sweet potatoes)
  • 5-6 TB of olive oil
  • salt, pepper to taste (throw a little cayenne pepper or even curry if you're feeling it!)
  • Cut fries 1/4-1/2 thick. The thinner, the faster they cook. Keep that in mind when timing your fries.

Directions:

  • Toss in bowl with oil and seasonings
  • Place fries on lined or sprayed pan in one layer
  • Covered lightly with foil
  • About 30-40 minutes, and again, keep an eye on them, depending on the size of fry. No one likes a burnt fry!
  • Put toppings in separate bowls (like you do with your taco fillings)

Suggested toppings are:

  • Cheddar Cheese (shredded)
  • Chili (veggie or meat)
  • Chives
  • Peppers
  • Onions
  • Gravy
  • Anything you'd like, get creative!

 *note: using separate mini foil pans or even oven safe plates are also a good idea for the kids. Not only for portion control, but for the toppings. They will really get to personalize! Take fries out 3-5 minutes earlier than if they were completely done, have kids (safely) top their disco fries. Put them back in the oven. Let cool slightly and eat.

 Throw disco dance party after dinner to work off those yummy disco fries!
